Cinnamon Twist Cookies

Ingredients

Dough:

4 c. flour
2 egg yolks (add one at a time)
3/4 c. sour cream
2 sticks
2 1/4 teaspoons yeast

Mixture:

1 cup sugar
1 teaspoon cinnamon
1 teaspoon vanilla

Instructions

Mix Cinnamon Twist mixture together and kneed the dough
Put dough in the fridge for at least two hours
Roll out dough into a rectangle fold then roll out into a rectangle again, repeat 3 times
Cut rectangle in half from top to bottom
Cut two rectangles into smaller (about one inch) pieces and put onto sheet
for 25 minutes on 375 degrees

Oatmeal Chocolate Chip Cookies

Ingredients


1 1/4 cups old fashioned oats
1 cups all-purpose flour
1/4 cup granulated sugar
1/2 cup brown sugar (or dark brown sugar)
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup canola oil
1 large egg
2 teaspoons vanilla extract
1 cup (probably even less) semi-sweet chocolate chips

Instructions

Mix Cinnamon Twist mixture together and kneed the dough
Put dough in the fridge for at least two hours
Roll out dough into a rectangle fold then roll out into a rectangle again, repeat 3 times

French Beignets

Ingredients


1 1/2 cups lukewarm water
1/2 cup granulated sugar
1 envelope active dry yeast
2 eggs, slightly beaten
1 1/4 teaspoons salt
1 cup evaporated milk
7 cups bread flour
1/4 cup shortening
Nonstick spray
Oil, for deep-frying
3 cups confectioners' sugar

Instructions


Mix water, sugar, and yeast in a large bowl and let sit for 10 minutes.
In another bowl, beat the eggs, salt and evaporated milk together. Mix egg mixture to the yeast mixture. In a separate bowl, measure out the bread flour. Add 3 cups of the flour to the yeast mixture and stir to combine. Add the shortening and continue to stir while adding the remaining flour. Remove dough from the bowl, place onto a lightly floured surface and knead until smooth. Spray a large bowl with nonstick spray. Put dough into the bowl and cover with plastic wrap or a towel. Let rise in a warm place for at least 2 hours.
Preheat oil in a deep-fryer to 350 degrees F.
Add the confectioners' sugar to a paper or plastic bag and set aside.
Roll the dough out to about 1/4-inch thickness and cut into 1-inch squares. Deep-fry, flipping constantly, until they become a golden color. After beignets are fried, drain them for a few seconds on paper towels, and then toss them into the bag of confectioners' sugar. Hold bag closed and shake to coat evenly.

Chocolate Chip Biscottis

Ingredients


1 lb butter whipped
1-2/3 cup sugar
4 eggs (add one at a time)
1 teaspoon vanilla
1 shot brandy
1 teaspoon baking powder
1/4 teaspoon baking soda
Pinch of salt
1 cup chopped walnuts
7 cups flour
1 cup chocolate chips

Instructions


Preheat oven to 350 degrees
Bake for 20 minutes then cut the biscottis , separate them then put in the oven for another 10 minutes
